Native to east Asia, the Cinnamon Plant is a highly prized ancient spice. It is grown for 1½ - 2 years and then it is coppiced. Coppicing is the process of cutting the plant down to one inch. This will cause about a dozen new shoots to appear around the roots. You can then harvest the shoots, scraping off the outer bark and removing the woody portion, leaving the inner bark. This bark is dried immediately to create fresh cinnamon. Homemade cinnamon is fun and delicious to use in many recipes.
